Cranberry and spices combined with gin create a lovely warm balance that is perfect to enjoy on its own or in a gin and tonic. We find the sous-vide method works best for this one.
Ingredients
750 ml gin
2 cups highbush cranberries
1 cinnamon stick
peel of half an orange
4 allspice berries
1 clove
bay leaf
2 tsp coriander seeds
Traditional Method:
Place ingredients in a jar and keep in a cool, dark place. Allow to infuse for 3 months. Strain liquid through a fine mesh sieve and then strain again through a coffee filter.
Sous-vide Method:
Set sous-vide water bath to 140 degrees. Place ingredients inside a plastic ziplock or vacuum sealer bag and remove air. Place bag inside sous-vide water bath and allow to infuse for 2 hours.
