Ingredients
1/2 cup shelled hazelnuts
1/2 cup sugar
1 cup vodka
Traditional Method:
Place ingredients in a jar and keep in a cool, dark place. Allow to infuse for 3 months. Strain liquid through a fine mesh sieve and then strain again through a coffee filter.
Sous-vide Method:
Set sous-vide water bath to 140 degrees. Place hazelnuts, sugar, and vodka inside a plastic ziplock or vacuum sealer bag and remove air. Place bag inside sous-vide water bath and allow to infuse for 6 hours. Strain liquid through a fine mesh sieve and then strain again through a coffee filter.
